Whole30 – Buffalo Chicken Stuffed Sweet Potatoes

Years ago, a rabbit trail of internet recipe searching brought this meal to my attention. I tried it out, and it quickly became a favorite. It’s loaded with veggies and classic buffalo flavor, and it’s completely crave-worthy even if you’re not trying the Whole 30 eating plan. The sweetness of the potatoes and the heat of the chicken bring balance to the Force! 😉
Football season is upon us, and this makes for some great gameday food. Hmmm, that’s a good idea for a post… healthy football and party snacks… we’ll see what I come up with!
I have to review several sites to find this recipe every time I go to make it, so I’m posting it here… just to make life a little easier.

Recipe adapted from Buffalo Chicken Stuffed Sweet Potatoes (Paleo/Whoole30) – Eat the Gains

Ingredients

  • 4 medium sweet potatoes
  • 1 Tbsp olive oil
  • 1/2 cup onion – diced
  • 1/2 cup celery – diced
  • 1/2 cup carrots – shredded
  • 2 heaping cups cooked shredded chicken
  • 1/4 cup avocado mayo
  • 1/4 cup Franks hot sauce
  • 1 tsp garlic powder
  • 1 tsp dried dill
  • 1/2 tsp smoked paprika
  • 1/8 tsp crushed red pepper flakes (more for spicier)
  • 1/8 tsp cayenne pepper (more for spicier)
  • salt & pepper to taste
  • Toppings: whole30 ranch dressing, franks hot sauce, fresh parsley, green onions
    Not doing Whole30? Try bleu cheese dressing or crumbles!

Directions

  1. Bake sweet potatoes at 400 degrees about 1 hour until soft. Time will depend on how big the potatoes are.
  2. After the potatoes are removed from the oven, set aside to cool. Heat oil in a frying pan over medium-low heat. Add onions and celery and cook for 5-7 minutes. Add carrots and cook another 5-7 minutes until softened. Pour into a medium bowl.
  3. Cut potatoes in half and scoop out most of the insides, leaving a thin layer so they can maintain their shape. Add insides to bowl with veggies.
  4. Add chicken, mayo, hot sauce, and spices to bowl, and stir and mash until well combined. Spoon mixture into potato shells.
  5. Bake potatoes AT 350 for 20 minutes until heated through. Add toppings of choice and enjoy!

What I say is that, if a man really likes potatoes,
he must be a pretty decent sort of fellow.

    The mix of flavors of savory and sweet added to my surprise of how much I really enjoyed this dish. When I was told about sweet potato’s and buffalo chicken they didn’t seem like an easy relationship or marriage but their opposites really pull out the flavor and make it a yummy delicious supper with the comfort of being healthy, per suggestion I did put a little blue cheese dressing on top to add a bit of pizazz and it was a keeper!!
