Two books arrived on my doorstep, and that has made all the difference…

Hello dear readers! I’ve struggled a bit these past few months to prioritize my writing. There’s been a recipe or two, some trail entries, and our trip to St. Augustine, but not much else. A yellow notebook holds a running list of topic ideas, and I even have a post that’s been in the draft process for weeks now, but still, my laptop lay sorely neglected. Moving, working out, meal planning and grocery shopping usually shove their way to the top of the to-do list. Timewasters, fluff and busyness all attempt to lay claim on the hours of my day. And writer’s block is real. Even on days where I had extra time, the creative juices were slow in flowing. Some of those are good excuses, I know, but as my daughter once said in her much younger years – “Excuses are pickles!”
(No, we have no idea what that means. But it’s become a family saying for all posterity. πŸ˜‚)
Then one day, the stars aligned and inspiration struck, courtesy of the mailman and two extraordinary authors.

One of my goals this year is to read more, both fiction and non-fiction. I received two new books the other day, one I purchased for myself and one a gift from my hubby. Strikingly different but sharing a common theme – together they inspired this post.

Hiking Log Entry #3 – Erwins View Trail

Location: Linville Falls Gorge, Blue Ridge Parkway
Length: 1.8 miles
Elevation Gain: 252 feet – with some moderate slopes and steep steps.
Pros: Amazing Views, wide path and easy to navigate, a few benches along the way, lots of wild rhododendrons, good-sized parking lot at trailhead.
Cons: fairly crowded (on a Sunday), deep muddy areas at observation decks, trail to upper falls closed

Sun & Sea in St. Augustine

“I followed my heart, and it led me to the beach.”

Our big vacation of the year was supposed to be an Alaskan cruise – complete with whale-watching, stunning glaciers, majestic mountains, and eating exorbitant amounts of freshly caught salmon. After unforeseen circumstances forced us to cancel this trip, we opted for a shorter, less expensive jaunt to the opposite corner of the country: Florida. Having endured a long, cold winter in New York, Ohio, and Kansas, this turned out to be exactly what our vacation-deprived souls needed. Did you know 18th and 19th century doctors used to prescribe spending weeks by the sea? Where can I find a doctor like that?? πŸ˜‰
We’ve been to several places in Florida, each with its own flair and personality. For this getaway we settled on the historic beachside town of St. Augustine.

Hiking Log Entry #2 – Devil’s Bathtub Trail

Location: Mendon, NY
Length: 2.2 miles
Elevation Gain: 233 feet – some steps, some slopes
Pros: Pretty views, wildlife, picnic tables and outhouses at the trailhead, boardwalks built alongside some of the muddy areas
Cons: several trails connecting and overlapping – a bit confusing, also the bugs were fairly aggressive.

Whole30 – Tuscan Garlic Salmon

Question: WHY do men lose twice as much weight as women, even if they are following the same diet??? So unfair, right? Barry and I have been on a Whole30 eating plan for the last 3 months and so far, it’s working for both of us… it’s just he has lost about 27 lbs, and I’ve lost around 13. But since we are each finding success (albeit slowly for me) we are going to stick with it a while longer.
Whole30 was the new “it” diet about 10 years ago, and if you’ve tried it, you know it’s not for the faint of heart! No grains, dairy, legumes, corn, or added sweeteners (real or fake). It’s surprising to discover how much sugar is in everything once you start reading labels. Breakfast sausage? Sugar. Mustard? Sugar. Ice cream? Just kidding! πŸ˜‚
We are not being quite as strict as the original guidelines, and we have a cheat meal about once a week, which usually means going out, and I think that’s why we’ve been able to carry on. But eating like this means I do a LOT of meal-planning and cooking, and I’m always looking for new recipes to prevent us from getting bored. Sometimes I don’t always remember what I’ve made, or which website that one chicken recipe was on…the one we both really loved…
So that’s why I created this category in my blog. When I find a great recipe, I’ll drop it here, so I can easily find it again. I promise all these will be tried and tested, delicious, and healthy. If you try one out, leave me a comment. And if you’re looking for a cheat meal, just ask me to post my monster cookie recipe instead! πŸͺ

Location – Penfield, NY
Length – 2.1 miles
Elevation Gain – 121 ft (so pretty flat most of the time!)
Pros: Well-marked, parking available, easy trail with a few benches and boulders for rest breaks, not too crowded, pretty sights
Cons: strange garbage pile on side of trail before the tunnel

Health and Accountability – Part 2

Three months into 2025, so it’s time for a fitness update. How’s it going for you? I’ve been rather reluctant to write this post, not because I experienced any major setbacks, but because I haven’t progressed as much as I hoped. Is it worth the time it takes to write several hundred words – all to say “nothing new to report”?
The importance of being transparent is what brings me here. Writing about the temptations and the struggles, and the victories – small though they may be – provides a mile marker of accountability on this journey. It is a catalyst to refocus, reevaluate, and renew.

There and Back Again – A Nomad’s Tale

Future me may refer to these last few months as the Winter of Waiting. It certainly has been a time of waiting and upheaval and confusion and waiting and changed plans and unknowns and more waiting. We started in Kansas, expecting to wait and work there a few months and then travel to Phoenix. That job got cancelled and we were sent to Ohio. We expected to be here a few months while waiting for the next assignment – which happened to be Wisconsin. At the last minute that position was given to another employee, and we were told to wait in Ohio for an undetermined amount of time. Then suddenly the news came – we were heading back to New York. Honestly, we hesitated a bit to announce our latest destination – we felt so uncertain that it would actually come to pass.
But now the waiting is over, the team meeting is complete, housing has been arranged, and in 24 hours we will be on the road. I believe I can say with some confidence, we are moving back to Rochester, New York!

Guinness Beef Stew

St. Patrick’s Day is almost here – the one day we all get be Irish – and how lucky we are for that! Ireland is truly a magical land, its history fascinating, its culture unique, and its people remarkable. If you have even a bit of Irish blood running through your veins (I proudly embrace my 6%!), then that is something special! So, in honor of those of us who are Irish, πŸ˜‰and those who are every March 17, I thought I’d post a few favorite recipes. If you’re thinking about celebrating the holiday at home this year, then this post is for you. This delicious beef stew is Irish comfort food at its best, rich with classic flavors, and of course, Guinness! 🍺☘️

Tipsy Leprechaun Cupcakes

If I were ever crazy enough to open a bakery, I’d want to specialize in boozy cupcakes. Margarita cupcakes filled with lime and tequila and sprinkled with salt, sweet treats of vanilla and bourbon, or almond and amaretto, and pina colada cupcakes soaked in rum and topped with a paper umbrella. And these – Tipsy Leprechaun cupcakes – dangerously delicious chocolatey bites with 3 kinds of alcohol!

The cupcakes are based off of a popular cocktail that consists of a shot of Baileys and Irish whiskey dropped into a pint of Guinness. It was originally called an Irish Car Bomb, which is incredibly offensive, so it is now most often called an Irish Slammer, probably because you have to drink it VERY quickly, before the cream curdles. I love a good dark beer, but I don’t usually chug one in less than a minute, so these cupcakes are the way to go for me! They start with a Guinness chocolate cake, are filled with whiskey ganache, and topped with Baileys buttercream. Make them for St. Patrick’s Day, or anytime you are craving a boozy sweet treat!
